The Subway opening has been pushed back another week due to health inspection scheduling, according to Sodexo Resident District Manager Ira Simon.

The soft opening, originally planned for April 14, is now scheduled for April 21.

“We were not able to get the health inspection done until [April 7],” said Simon. “We couldn’t start training employees until we got health inspection done.”

Employees will now undergo training from April 13-15.

In a previous Clarion article from March 31, 2014, Simon stated that the cause for the original delay from January was due to many issues including contractual problems with Subway, delivery complications and University approval.

The final health inspection was completed on Monday, April 7. Subway passed the inspection and was given permission to conduct business, according to Simon.

There will be a VIP invite-only event on April 16, followed by a soft open on April 17 and 18, which was originally planned for April 9-11.
“I’m ready,” Simon said. “I’m very apologetic for the time it took to get open.”

On Monday, April 21, 2014, Subway will open for regular business in the Driscoll Underground. It will be open from 7:30 a.m to 7:00 p.m. five days a week.
