A Boulder-based, start-up sandwich shop, Snarf’s, which has been the recipient of numerous  best-of restaurant awards, is scheduled to open near the DU campus on East Evans Avenue and South Williams Street by early-2012.

The shop will be opened for late nights to meet the needs of students who seek to fulfill their midnight munchies, said Siedel. They will also be open for breakfast. The shop’s  restaurant awards include Boulder Weekly’s Best of Boulder, MetroMix Denver’s Best of Denver and Riverfront Times’ Best of St. Louis.

“We’ve been looking at it for some time,” said Jim Siedel, founder and owner of Snarf’s. “It’s a great neighborhood and it’s what the community needs.”

Snarf’s joins a plethora of other Colorado start-ups such as Chipotle, Noodles and Company, Illegal Pete’s and Jerusalem’s near the DU campus.

“We aren’t really going to compete with anyone,” said Siedel. “We are just going to do our own thing by providing the best sandwich we can.”

Siedel said his nickname in college, “Snarf,” inspired the name for his sandwich start-up. Siedel also said he hopes that the city of Denver will approve a liquor license by the time the shop opens.

Snarf’s first location opened on Pearl Street in Boulder, Colo. It grew from one store in 1996 to nine stores, opening around the Midwest and Colorado.

“I am so excited for another place to go out to at nights and it sounds like it’s going to kick ass,” said  sophomore Mollie Braen – adding that she enjoys a late night snack at Jerusalem’s and Illegal Pete’s from time to time.

Their menu will consist of toasted traditional sandwiches such as the BLT, an Italian sandwich and a vegetarian sub.

It will also have specialty sandwiches such as a smoked brisket with Swiss cheese, a rotisserie chicken with cheese and an artichoke feta with provolone.

The shop also has an average rating of 4.5 out of five stars from websites such as UrbanSpoon and Yelp.

Snarf’s will be taking the place of the popular Trompeau Bakery, which moved to a larger location  on the intersection of Broadway and East Bates Avenue in Englewood, Colo.

Snarf’s will stand in Trompeau’s former location at 1729 E. Evans Ave.
