Original Chipotle set to close for summer remodel


On the evening of May 18, the Chipotle Mexican Grill restaurant on E. Evans Ave. will close for three to four months of renovations and remodeling.

The Evans location is the original Chipotle restaurant, opened in 1993 by founder Steve Ells, and it is noticeably small and outdated compared to new locations that cover the globe. It is still unknown exactly what sort of renovations will take place, but it will be a multi-million dollar project; customers would like an expanded line and dining room, and employees would appreciate more work, storage and office space. The restaurant is set to be updated and modernized but still keep its originality and charm.

Most employees from the Evans store will be transferred to other Denver locations and return when the remodel is complete.

An exact date of reopening has not been set.

After the Evans location closes, the Chipotle nearest to the DU campus will be at University Hills on S. Colorado Blvd.
